Watermelon Cream Recipe with Scallop Skewer
Ingredients (2 people):
- 400 gr. of watermelon
- 4 scallops
- 1 small zucchini
- 1 tomato
- 1 scallion
- 1 glass of mineral water
- 2 drops of lemon
- 1 spoon of sugar
- olive oil
- Basil leaves
Preparation of the recipe for Watermelon Cream with Scallop Skewer:
Finely chop the scallion and sauté it in a saucepan with 2 teaspoons of oil without taking color. Add the peeled tomato, without seeds and chopped. Peel the zucchini with a peeler and reserve the skin. Chop the zucchini and add it to the poached vegetable. Season, skip it and reserve.
For the watermelon creamPut the chopped watermelon, chopped basil, lemon drops and a pinch of salt in a bowl. Add the sautéed vegetables and let stand 10-12 minutes. Crush and reserve.
Saute the scallops in a pan with a little oil. Put them in a baking dish and bake at 200ºC for 2-3 minutes. Prepare 2 skewers by putting two scallops in each.
Saute the zucchini skin back and forth with a little oil. Put the watermelon cream in a bowl and accompany with the scallops skewers and zucchini skin.
