Leek Cream Recipe with Sauteed Beans
Ingredients for cream of leeks with sauteed beans
- - For 4-6 people:
- 6 leeks
- 2 potatoes
- 800 gr. of beans (shelled)
- 4 slices of bacon
- 1 tablespoon anise
- olive oil
- 4 peppermint leaves
Creation of leek cream with sauteed beans
Wash the leeks, chop them (the green part too), and cook them in a quick pot with a glass of water. Add the chopped potatoes, season and shake the casserole. Close the pot and cook (at 1) for 3 minutes after the steam starts to come out. Remove some of the broth, crush with the electric mixer and strain.
Put the beans to cook in a pot with boiling water and salt. Cover and cook for 5-8 minutes. Remove, drain and peel the beans (if they are very small it will not be necessary).
Chop the bacon and brown it in a pan with a splash of oil. When it is golden, add the beans. Sauté and add the mint leaves and anise. Cook for 3-4 minutes.
Serve the leek cream on a deep plate and place the beans in the center.
To clean the leeks, make several cuts with the tip of a knife and rinse them until they release all the dirt. In case they are very dirty, it is best to cut them in half lengthwise and pass them through water until they are very clean.
